1.Green Banana Flour Roti (Flatbread)

Ingredients:

  • 1 cup green banana flour

  • 1/4 cup whole wheat flour (optional, for easier rolling)

  • Pinch of salt

  • Water as needed

Instructions:

  1. Mix green banana flour, wheat flour (if using), and salt in a bowl.

  2. Gradually add water to form a soft dough.

  3. Divide the dough into small balls and roll into thin circles.

  4. Cook on a hot skillet for 1-2 minutes per side, flipping until brown spots appear.

  5. Serve with curry or chutney.

2. Banana Flour Dosa

Ingredients:

  • 1 cup green banana flour

  • 1/4 cup rice flour

  • 1/4 cup curd (yogurt)

  • 1/2 tsp cumin seeds

  • 1 green chili, finely chopped

  • Salt to taste

  • Water to adjust consistency

  1. Mix all ingredients in a bowl to form a thin batter.

  2.  Heat a non-stick pan and pour a ladle of batter, spreading it thinly.

  3.  Cook on medium heat until golden on both sides.

  4. Serve with coconut chutney or sambar

3. Green Banana Flour Halwa

Ingredients:

  • 1/2 cup green banana flour

  • 1/4 cup ghee (clarified butter)

  • 1/2 cup jaggery syrup

  • 2 cups water

  • Cardamom powder (a pinch)

  • Chopped nuts for garnish

Instructions:

  1. Heat ghee in a pan and roast green banana flour until aromatic.

  2. Add water gradually, stirring to avoid lumps.

  3.  Stir in jaggery syrup and cook until thickened.

  4. Add cardamom powder and garnish with nuts. Serve warm.

4. Banana Flour Pakoras (Fritters)

Ingredients:

  • 1 cup green banana flour

  • 1/4 cup chickpea flour (besan)

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1/2 tsp carom seeds (ajwain)

  • Salt to taste

  • Water to make a batter

  • Sliced onions, potatoes, or pinach

  • Oil for frying

Instructions:

  1. Mix banana flour, chickpea flour, spices, and salt in a bowl.

  2. Add water to form a thick batter.

  3. Dip vegetables into the batter and fry in hot oil until crispy.

  4. Serve with mint chutney or tamarind sauce.

5. Banana Flour Idli

Ingredients:

  • 1 cup green banana flour

  • 1/2 cup semolina (rava)

  • 1/2 cup curd (yogurt)

  • 1/2 tsp baking soda

  • Salt to taste

  • Water as needed

Instructions:

  1. Mix banana flour, semolina, curd, and salt in a bowl. Add water to make a batter.

  2. Let it rest for 15 minutes, then stir in baking soda.

  3. Pour the batter into greased idli molds and steam for 10-12 minutes.

  4. Serve with coconut chutney and sambar.

6. Green Banana Flour Pancakes

Ingredients:

  • 1 cup green banana flour

  • 2 eggs

  • 1 cup milk (or dairy-free alternative)

  • 1 tbsp honey or maple syrup

  • 1 tsp baking powder

Instructions:

7. Green Banana Flour Bread

Ingredients:

  • 2 cups green banana flour

  • 3 ripe bananas, mashed

  • 2 eggs

  • 1/4 cup coconut oil, melted

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.

  2. Mix mashed bananas, eggs, coconut oil, and vanilla in a bowl.

  3. Add green banana flour, baking soda, and salt. Mix until combined.

  4. Pour into the loaf pan and bake for 45-50 minutes.

  5. Cool before slicing.

8. Green Banana Flour Cookies

  • 1/2 cup coconut sugar

  • 1/4 cup coconut oil, melted

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1/4 tsp baking powder

  • inch of salt

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mix coconut sugar, coconut oil, egg, and vanilla in a bowl.

  3. Add green banana flour, baking powder, and salt, stirring to form dough.

  4. Scoop dough onto the baking sheet and flatten slightly.

  5. Bake for 10-12 minutes. Cool before serving
